Executive Chef Adil Fawzi

french bitro nyc Executive Chef Adil Fawzi Bistro 61Chef Adil Fawzi has always had a passion for fine food, wine, and travel. His inspiration can be attributed to a broad range of culinary influences. Born in Casablanca, Adil’s interest was sparked in the kitchen with his mother as she cooked traditional Moroccan cuisine. As he got older, Adil would spend his summers in New York City. It was during his time spent working at his Uncle’s NYC deli that Adil claims solidified his aspirations to enter the culinary world.

Adil pursued a BA in Culinary Arts from the esteemed Le Lycee Rene Auffray in Paris, France; one of the most prestigious French culinary schools in the world. He went on to complete his Master’s Degree in Culinary Arts and Hotel Management at Maxim’s School, one of the most well-regarded culinary institutes in Paris, France while apprenticing under acclaimed French Chef Frank Charpentier – a 3 Michelin Star Chef. Chef Fawzi was fortunate to have the opportunity to visit countless fine wine & champagne vineyards, work in 3 stars Michelin rated restaurants and land a role as a chef for the top caterer in Paris, France – Le Notre & Raynier Marchetti, which enabled him to travel extensively. Finally, in 2005, Adil returned to the United States where his dream was born some 20 years ago to begin his career. This is Chef Fawzi’s second French restaurant venture.

“The French food was excellent. Everything that was recommended was perfectly seasoned and wine selection was perfect. It was truly a neighborhood gem, a best in class Upper East Side in NYC French restaurant. My compliments to the Chef”

“Best Bistro on the Upper East Side.  Great escargot, great steak frites, and the Chef blew my mind with the burgers! I am a regular now at this restaurant. They have a wine special now, 50% off bottles over $100. Still a little rich for my blood, but this is still a cute little spot to refuel after shopping at bed bath and beyond.”
