Born in Casablanca, Adil Fawzi has proved to be a startling success at a very young age. He too was first exposed to the world of fine fare through family, toiling away in his uncle's deli, here in New York, during the summers of his teenage years. After completing high school in France he attended Le Lycee Rene Auffray earning a BA in Culinary Arts. Sparing not a moment's time Adil immediately enrolled in Maxim's School, one of the most well regarded culinary institutes in Paris, completing his Master's Degree of Culinary Arts and Hotel Management, all the while apprenticing under Frank Chapentier. Adil would soon head to New York where he briefly worked as a private chef before finding his home here at Bistro 61, bringing with him an unparallel resolve, an unwavering attention to detail and a certain unmistakable Moroccan flair. In just one year he would go from hired sous chef to one of the three partners of the Bistro and the head chef of the kitchen.
